Bivouac specializes in fresh pizza and complements at your venue of choice. With our mobile wood burning oven, we can “set up camp” wherever you like. Featuring pizzas with the freshest ingredients, our fast and delicious food is sure to keep your party happy! 

We are a charitable truck that donates 5% of our sales to causes we believe in. Have a cause you are passionate about? Let us know and we will make the donation in your name! We specialize in fundraising events as well. Contact us regarding raising funds for your organization or cause! 

Events: 

Our buffet style setup allows us to serve your guests quickly and easily. We will provide pizzas at a pace that matches the needs of your guests. Standard service time is 2 hours. Additional service time will be charged based on guest count. Keeping your guests safe is our priority, staff will be provided to serve guests at your buffet to ensure  minimal contact with dishes and utensils. Each booking includes standard plates, napkins, utensils, and complementary seasonings. We will arrive one hour before the beginning of your event to set up. 

Pricing and Menus: 

Listed below are some of our traditional options. We would love to work with you to create a customized menu that fits the theme of your special event. 

  • Pizzas and salads are charged on a per person basis, platter items are charged at a fixed  cost.  
  • Each party is subject to meeting a minimum based on the day of week. We can serve parties of less than 50 guests, however, the minimum setup fee and per person charge of $13 per guest will still be charged based on a party of 50.  
  • Children (4-10 years of age) are half price after the minimum number of paid guests has been reached.
  • Menus are due 2 weeks ahead of your event. Your event total is due 2 weeks ahead of your event as well. Payment options include cash or card. 
  • A setup fee will be charged based on the chart below.

The Fine Print:

 A non-refundable reservation fee of $250 is required to save your date. Dates will be booked on a first come, first served basis. If the first party is in touch about a date and another party shows interest, the first party will have 48 hours to book the date before it is released. The $250 reservation fee will work toward your bill the day of the event. 

**Given current events with the COVID-19 pandemic, we will allow cancellations and will refund you fully with at least 2 weeks notice before your date. Cancellations within 2 weeks of your event cannot be refunded. Money can be used toward a future event booked within 12 months of the original date**

Our mobile kitchen is located in Bear, DE. Distances greater than 20 miles from zip code 19701 requires the addition of a travel fee at $1 per mile. 

While we do not charge a gratuity, we work hard to bring you prompt service and quality food. Gratuity is greatly appreciated, thank you!

Caprese Salad $4 – Fresh Arugula topped with heirloom tomato, fresh mozzarella balls, basil, salt and pepper, topped with balsamic glaze. 

Tortellini Salad $4 – Chilled Cheese Tortellini, Sun Dried Tomatoes, Black Olives, Garbanzo Beans, Herb Vinaigrette

Pasta Salad $4 -Tri-color rotini with cubed sharp cheddar, Cubed hard salami, sliced green olives, tossed in a robusto italian dressing

Cuban Slider $4 – Slow roasted pulled pork, Virginia ham, melted swiss, dijonaise, house made bread and butter pickles on a toasted Hawaiian bun

Cheesesteak Slider $4 – Shaved steak, cheese whiz, sauteed onions served on a toasted Hawaiian bun. Spicy ketchup served on the side

BBQ Chicken or Pulled Pork Slider $4 – Pulled chicken or pulled pork slow cooked in Kansas City style bbq sauce, topped with french fried onions and house made slaw, served on a toasted Hawaiian bun

Fig Jam and Goat Cheese on Crostini $3 – Fig Jam spread with goat cheese on a toasted crostini. Topped with crushed pistachios, pepper flake, roasted garlic, and a balsamic drizzle

Bruschetta on Crostini $3– Fresh tomato, basil, and minced garlic tossed in olive oil, served on a toasted crostini. Drizzled with balsamic glaze. With or without red onions. 

Bacon Wrapped Dates $3 – Drizzled with balsamic glaze

Grilled Jumbo Shrimp $3 – Grilled jumbo shrimp tossed in a sweet and spicy chili sauce

Stuffed mushrooms with crab imperial $4 – mushroom caps stuffed with creamy crab imperial mix. Dusted with paprika and chives. 

Buffalo chicken cups $3 – Buffalo chicken dip topped with melted cheddar, served in individual phyllo cups

Spinach and artichoke dip cups $3  – Creamy spinach and artichoke dip topped with melted mozzarella, served in individual phyllo cups
